ITALIAN TRIFECTA - Mozzarella, Parmesan & Ricotta

 

Our most popular class - the "Italian Trifecta" of Ricotta, Mozzarella & Parmesan all in one class - too much fun! This is a great class for the beginning cheesemaker all the way to the cheesemaker with some experience because you learn how to make a fresh cheese, a stretched cheese and an aged cheese. Our most popular class - the "Italian Trifecta" of Ricotta, Mozzarella & Parmesan all in one class - too much fun! This is a great class for the beginning cheesemaker all the way to the cheesemaker with some experience because you learn how to make a fresh cheese, a stretched cheese and an aged cheese. One of our most popular classes, it will fill up fast!

You will take home a ball of mozzarella, some fresh ricotta, and about an 8oz wheel of Parmesan - all made by you in this class!

BRIE

Brie cheese, the Queen of Cheeses, is a wonderful creamy cheese that is amazing in flavor and, actually, fairly east to make at home.  After you complete this class you will be able to impress your family and friends with your awesome, homemade Brie cheese.  You will take home about an 8 ounce wheel of Brie to care for at home.

You will learn to make two blue cheeses in this class you will learn how to make  - Cambozola and Valley Blue (my original recipe, creamy and full of a nice blue flavor).  


 You will take home an 8 ounce wheel of both to age. Your handout will contain these two recipes and many more like Stilton, Roquefort, Buttermilk Blue & Gorgonzola! Yo

Sausage - what started as a way to preserve meat has turned into one of the most popular foods around! You will learn how to make them from scratch - without fillers, without organ meat - just meat, seasonings and fun things like cheese and fruits. You will be able to stuff sausage into casings o

Our most popular non-cheesemaking class.   


Sausage - what started as a way to preserve meat has turned into one of the most popular foods around! You will learn how to make them from scratch - without fillers, without organ meat - just meat, seasonings and fun things like cheese and fruits. You will be able to stuff sausage into casings or leave it loose. You will take home about 2.5 pounds of sausage.


Class fee $70.

In this class you will learn how to make sourdough bread from making the starter through baking a loaf.


You will leave class with your very own sourdough starter and all the information you need to take care of it and bake your first loaf in about 14 days! You will also learn creative and tasty things to do with the sourdough discard.


Class fee $60

PIZZA

 You will learn how to make pizza dough, pizza sauces (garlic & red), mozzarella cheese and ricotta cheese. Then you will make a pizza with your freshly made ingredients and take it home to share with family and friends (or not). We will also make a few pizzas in class for you to enjoy so come to class hungry!
