Cheesemaking using Sheep's milk is a cheesemakers dream! In this class we will be making MANCHEGO but will discuss other traditional sheep's milk cheeses such as P'tit Basque, Feta and Pecorino. We will also talk about using sheep's milk for cheeses that aren't traditionally made with sheep's milk.
Sheep's milk will be available for purchase at the event but please order in advance by sending a note to kimjoanmc@att.net. $10 per half gallon. Also, take home kits will be available - enough product minus the milk to make 2 one gallon batches of Manchego - for $10 a kit.
